I was really looking forward to some winter weather here in Dallas, and it looked promising for a minute. You can take that literally since the cold temps lasted for practical minutes during the first week of 2019. Then my birthday rolled around on Saturday, the 5th, and BAM! The clouds gave way to a friendly, shiny sun and temperatures in the high 60's-low 70's. It didn't just feel like a gorgeous late spring day; it was as if it were a gorgeous late spring day in San Diego.
I'm not complaining. There are just some things that are made more enjoyable when it's done in winter weather, like bundling up in your new scarf and jacket. Or eating piping hot noodle soup. Or eating boozy s'more macarons! Campfire-y, whiskey-accented marshmallow fluff (homemade, natch), a smooth and smoky chocolate ganache, and honey graham cracker crumbs sandwiched between two delicate macaron cookies. Pair that up with your favorite coffee, hot tea, or whiskey dram, and all you're missing is a roaring fire...and you know, cold weather.
Using the brûlée torch is now my new favorite thing. Fortunately (or unfortunately, depending on who you ask), I have ample opportunity to use it again soon! I may have overdone it on my first attempt at making marshallow fluff and am now in possession of a few extra tubs of it, so here's hoping that I bake something else up as an excuse to slather some thick marshmallow goodness over the top and blast its pristine white surface into a nice, blistery caramel tone. Oooh, what do you think of the idea of a giant two-tier macaron pie? Hmm...
